Ground beef stuffed eggplants are one of my summer meal favorite! I really love it. Eggplants are as nutritional facts not much a beneficial vegetable yet they are delicious and in anyway good fiber. Enjoy this delicious Stuffed Eggplant (Karni Yarik) recipe. Very traditional Turkish family cooking recipe.
Ingredients
- Eggplants 6/8
- Ground Beef 10 ounce (300 gr)
- Tomatoes 2
- Green Pepper 2
- Parsley
- Garlic 2/3 clove
- Olive Oil
- Canola Oil
- Chili
- Black Pepper
- Salt
Wash the eggplants. Peal the cover like zebra and fry with canola oil in the pan. All sides for a few minutes.
Prepare the ground beef for filling. Put the ground beef in the pan, cook a bit, add a little olive oil. Then add chopped green peppers, cook a bit more.. then add chopped tomatoes, parsley, salt, chili and black peppers if you like you can use cumin too. Cook well.
Get the fried eggplants on a oven tray, cut on the top a little bit like a boat. Fill with ground beef mix you just prepared. Add the try half glass water and put in the preheated oven 400 F (220 C) cook around 15/20 minutes and while cooking check it, we don’t want them to burn.
